Recipe Review: BA’s Caramelized Shallot Greek Yogurt Dip
Entertaining really does not get any simpler than this. I cannot recommend this Bon Appétit recipe enough for social gatherings, or a to-go snack to keep in the fridge at work. Full of flavor, minimal dishes, and a healthier alternative to the usual French onion dip!

The great thing about this recipe is that you can play it fast and loose with the proportions, and it will still taste great. Only have two shallots? No problem. The shallot flavor won’t be quite as strong, but if you add a little extra apple cider vinegar, it will punch it up such that you’ll barely notice the difference.
I like to serve it with carrots, peppers, cucumber, pita chips, pretzel chips – basically anything that can serve as a vehicle to get it from bowl to mouth. Leftovers make a great sandwich or burger spread, garnish for soup/chili/curry, and side sauce for grilled steak or lamb. Try using it instead of sour cream on tacos. The limit is your imagination!
My alterations:
- Up the apple cider vinegar. Always. Brings out the tang factor deliciously.
- Make it with the 17.6 oz tubs of Fage greek yogurt. That way, the shallots and vinegar can be directly mixed into the yogurt while still inside the container. Ready to serve and ready to store.
- Using full fat instead of non or low-fat yogurt tastes essentially the same, but comes out creamier. All fat levels work well.
