Make-Ahead Breakfast Sandwiches
If you have time to use a toaster, then you have time for breakfast.
This is less a recipe, and more a method or formula. It’s designed for using what you already have in the fridge or pantry. You’ll need a baking tray or cake pan of some kind to make these in a big batch. This method is easily sized up or down for different sized baking vessels or intended number of sandwiches. The version below used a 10x13” pyrex and yielded 15 sandwiches.
Ingredients
2-3 c of your favorite omelette ingredients: vegetables, meat, cheese, spices
~32 oz egg whites (or 12-15 large eggs, beaten, with or without a splash of milk)
your favorite sandwich condiment or spreadable dip
English muffins
Protocol
Preheat oven to 375°F.
Lightly grease a baking pan with cooking spray, butter, or two tsp of oil on a paper towel.
Place your filling ingredients in the baking pan.
Gently pour eggs over your filling, season with salt and pepper.
Bake until the eggs no longer wobble when you shake the pan, generally around 20 mins. Remove pan from oven and set aside to cool.
While the eggs are cooling, cut parchment paper or wax paper into squares slightly larger than the English muffins you’re going to use.
Tip the eggs out onto a cutting board (flip the pan upside down).
Slice the eggs into muffin-sized squares by placing one of the English muffins on a corner of the eggs to measure the size square that will fit the bread.
Set aside however many squares you intend to eat over the next several days and place in a container in the fridge (these will be even faster to heat up later). For the rest, create short stacks of the squares, placing a parchment or wax paper piece between each one.
Put the stacks in a gallon freezer zipper-topped bag or storage container, then place in the freezer for future use.
Morning-Of Assembly Protocol
Toast an English muffin.
While toasting, heat an egg square on a paper towel-lined plate in the microwave for a minute or two at full power.
Put your favorite spread or condiment on the English muffin, followed by the eggs.
Wrap it to go in aluminum foil, or dig in right away. Enjoy!
