Garlic Scape and Basil Pesto
Spring means getting to take advantage of lots of weird and delicious produce. This is an intensely garlicky spread and sauce that has as many uses as traditional pesto. Garlic scapes are only available for a few weeks of the year, so get them while you can!
Ingredients
- 4 garlic scapes, chopped
- 1 c roughly chopped fresh basil
- 0.5 c freshly grated parmesean
- 0.25 c extra virgin olive oil
- 2 tsp white wine vinegar
Protocol
Add all ingredients to food processor, plus salt and pepper to taste, and pulse until reaches desired consistency. Make sure to scrape down the sides of the bowl frequently to get an even texture.
Use it on everything! I like it spread on sandwiches, tossed on pan-seared gnocchi, dolloped on pizza, whipped into goat cheese...the possibilities are essentially endless.
