Lemon Goat Cheese Tartlets

These zingy tartlets take less than 15 minutes to put together. Party approved!

Ingredients

  • ~3.5 oz soft goat cheese
  • 2 Tb lemon curd
  • 15-20 phyllo shells
  • pinch of salt
  • pomegranate molasses
  • zest of one lemon

Protocol

  1. Prepare shells according to package instructions for cold filling.
  2. Thoroughly whip goat cheese, lemon curd, and salt in a small bowl. This step can be done a day ahead and refrigerated overnight.
  3. Spoon ~1.25 tsp of mixture into each room temperature shell.
  4. Using a toothpick or chopstick, place 3 dots of pomegranate molasses on the surface of the lemon goat cheese mixture.
  5. Place a pinch of lemon zest on top of each shell, and serve!
